Shepherd's Pie

3 carrots cut into bite size pieces
1 onion cut up
2 tbsp olive oil
salt, pepper and dried Italian herbs
1 lb ground beef
1 garlic clove
1 1/4 cups beef broth
1 tsp cornstarch
1 tbsp Worcestershire sauce
1/4 tsp cayenne pepper
1/2 tsp thyme
1 cup frozen peas
3 cups mashed potatoes

brown ground beef, onion and garlic in skillet. combine beef broth, cornstarch, Worcestershire sauce and sprices. pour liquid over meat and simmer. cook vegetables a little and stir in meat mixture. pour into casserole dish. top with mashed potatoes. Bake at 350 for 30 mins. Cover with cheese if you want.

Sweet Hot Pepper Relish

This stuff is so good. you mix it with cream cheese and it makes a really yummy dip. This recipe is meant to make a big batch to can.

6 cups diced and peeled tomatoes (I used 8)
4 cups chopped red peppers
3 cups onions chopped
2-3 Tablespoons salt
4 cups sugar
1 1/2 cup vinegar
1 12 oz can tomato paste
5 fresh jalapeno peppers
1/2 to 1 1/2 cups pickled jalapeƱo peppers chopped. Drain and save liquid to use as part of vinegar.
1 Tablespoon garlic powder
1/4 cup dried onion.

mix gel with sugar. Combine rest of the ingredients and cook 20-30 minutes. Add sugar/gel mix and tomato paste. Simmer until sugar is dissolved. Process in bottles for 25 minutes.
